This is a cherished Pasta Salad Recipe! Simple ingredients. Simple process. But in the end you’ve got a bowl of pasta that always gets rave reviews. It’s so delicious. I dare you to not help yourself to seconds
Ingredients:
- 3 cups tri color pasta of choice. I used this Tarall’oro - Pasta all’Ortolana. It has a nice aroma when cooked and great texture for this salad.
- Breast portion of one chicken. Remove the breast from the chicken with the skin and bones intact.
- 1 medium green bell pepper (capsicum) cut into small squares
- 1 medium red bell pepper (capsicum) cut into small squares
- ¹⁄3 cup sweet corn kernels (thawed from frozen)
- ½ cup pickled cucumber, chopped into bite size pieces
- 1 ½ tsp dried tarragon or 3 tsp fresh
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp garlic powder or fresh minced garlic
- 2 Tbsp Olive oil
