There are many different, slightly varied Swiss steak recipes out there.  Swiss refers to the tenderizing of the steak since round steak tends to be tough. 
This Swiss steak recipe is a simpler, more straightforward version.  Some other recipes call for the use of Worcestershire sauce and various other chopped vegetables.  This is the perfect recipe for those carnivores that don’t want to fuss with vegetables.
Ingredients:
1/2 cup sifted flour
2 teaspoons salt
1/2 teaspoon pepper
1 (2 pound) round steak (1 1/2-inch thick)
2 Tablespoons oil
1 small onion, minced
2 cups diced tomatoes

Directions:
1. Preheat oven to 350° F. Mix flour, salt and pepper. Sprinkle mixture over steak.
2. Pound mixture into steak with a meat mallet or potato masher. Pound evenly until the meat is about 1/4 inch thick. Cut into 4 serving-size pieces. 
3. Heat the oil in a heavy skillet over medium-high heat. Add the meat and cook, turning once, until browned on both sides (4-6 minutes).
4. Transfer meat to a shallow baking dish.
5. Add onions to tomatoes, stirring to combine. Pour over steak. Cover the dish with foil.
4.  Bake at 350 degrees F until the meat is tender when pierced with a fork, about 1 1/2 to 2 hours.
